Garden Risotto Primavera

1) To make rice seasoning, combine:
2 tablespoons dried onion flakes
½ teaspoon black pepper
1 teaspoon kosher salt
1 tablespoon dried parsley
1 bay leaf
1/3 cup lemon juice
1 tablespoon chicken soup base
2 tablespoons chopped garlic
Zest of two lemons
Seal tightly and set aside.

2) To make the sauce, in a mixing bowl, combine:
½ cup Parmesan cheese
2 tbsp. diced red peppers
2 cups Alfredo sauce
2 cups frozen broccoli
1 cup artichoke hearts

3) 2 ½ cups white rice

Cooking Instructions:

1. Set almonds & sauce aside.
2. Add seasonings & 4 cups water to a large, heavy-bottomed stock pot. Bring to full boil, add rice, stir, reduce heat to low. Cover & simmer 20-30 min. or until rice is tender & liquid is absorbed.
3. Turn off heat, gently fold in sauce & stir thoroughly. Cover, let sit 5-10 min. (internal temp. 145°F).
4. Crumble almonds over top & serve.
