Asian or TexMex Pork Wrap

Description:
Hand-trimmed center cut pork loin provides a lean and delicious base for a slow cooked dish the entire family or football team will love. Hoisin, apple juice, soy sauce, garlic, and five spice create a delightfully light and delicious marinade for this pulled pork dish.

Prep
Trim cut and portion pork loin- full = 2 loins 17 oz each

Asian                              
1/2 cup apple juice
4 Tbsp soy sauce
2 red scoops hoisin
2 tsp five spice powder
2 tsp sesame oil
1-2 tsp red pepper flakes
1/2 tsp black pepper

Tex Mex
2 white scoops tomato sauce
2 red scoops chilies
2 white scoops BBQ sauce
1 Tbsp dried onion
1 tsp cumin
1/4 tsp cinnamon

3. Seal bag well and massage ingredients into pork. 

4. 1 bag of tortillas

Cooking Instructions:

Thaw completely (note meat is dense so may require at least 2 days of thaw time). Place contents of meat bag into crockpot.  Cook on low for 7-8 hours.  Remove pork from juices, shred with two forks and return to juices OR serve sauce on the side.  Place into wraps.

Serving suggestions for wraps: Asian– shredded cabbage or broccoli slaw mix; Tex Mex– cheese, sour cream, rice or beans

Pork Tenderloin with Apple Butter

This can be cooked at a higher oven temp-375 degrees for about 25-30 minutes or on the stove top.
You can also make this in the crock pot

Ingredients:

2    (1 1/2 pound) pork tenderloin   
1 teaspoon    seasoning salt or to taste   
   Black Ground Pepper to taste   
1 cup    apple juice   
1/4 cup    apple butter   
2 tablespoons    brown sugar   
1 pinch    ground cinnamon   
1 pinch    ground cloves   
 
 
Directions: 
1 In a Large zip loc bag put;
2 1 cup of Apple Cider
3 Take your Pork Tenderloin from season with Season Salt & Pepper to Taste.
4 Seal and Label
5 In a small zip loc bag place:
6 1/4 cup of apple butter
7 3 Tablespoons brown sugar
8 2 Tablespoons of water
9 1/4 teaspoon of ground cinnamon
10 1/4 teaspoons ground cloves

13 Cooking Directions:
14 Preheat the oven to 300 degrees F (175 degrees C).
15 Place the the pork tenderloins in a 9×13 inch baking dish or small roasting pan.
16 Pour apple juice over the pork, and cover the dish with a lid or aluminum foil.
17 Bake for 1 hour in the preheated oven.
18 After the hour, remove pork loins from the oven, and spread the apple butter mixture over them.
19 Cover, and return to the oven for 1 hour, or until fork tender.
20 Serve with Roasted Winter Vegetables

Italian Sausage Puttanesca

Ingredients:   

12 oz    whole wheat spaghetti   
6 large    pre-cooked Italian sausage   
1 cup    chopped onion   
1 cup    chopped green bell pepper   
3 teaspoons    garlic minced   
3 cups    spaghetti sauce or Marinara Sauce   
2 Tbs    tomato paste   
1/4 cup    halved pitted kalamata olives   
1 Tbs    capers, drained   
   Cooking spray   
 
 
Directions:
1 Spray a large pan
2 Place 6 Italian Sausages from below in to the prepared large pan
3 In a large bowl place: 
4 1 cup chopped onions
5 1 cup chopped green pepper
6 3 teaspoons minced garlic
7 3 cups spaghetti or marinara sauce
8 2 tablespoons tomato paste
9 1/4 cup kalamata olives or sliced black olives
10 1 Tablespoons capers
11 Pour over sausages in large pan.
12 Cover & label
13 Take package of spaghetti
14 Customer directions: Thaw pan of sausage
15 Preheat oven to 400°. Bake Puttanesca Sausage covered in a preheated 400° oven for 45-50 minutes or until sausage reaches 165° using an instant read thermometer.Uncover and sprinkle with grated cheese if desired to serve
16 Start cooking pasta 15 minutes before sausage is done. Cook pasta according to package directions. Drain well. Pasta may be reheated after initial cooking by just reboiling water and putting the pasta into the hot water for 1-2 minutes, redrain & serve.
