Citrus Baked Chicken

Preparation:

In small container mix:
2 tablespoons orange juice
2 tablespoons Dijon Mustard
 
In small baggie, mix:
¾ cup wheat cracker crumbs 
1 tablespoon orange zest/peal
1 tablespoon lemon zest/peal
1 teaspoon onion powder
¼ teaspoon black pepper

6 boneless chicken breasts

Cooking Instructions:

Thaw completely in refrigerator.  Preheat oven – 350 deg. Remix liquid and place in bowl.  Place crumb mixture in separate bowl.  Brush the chicken on both sides with the mustard mixture, then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Bake on baking sheet 20 minutes; turn and bake until cooked through, 15-20 min.
