Steaks with Garlic and Herb Butter
1) Blend the following ingredients together
½ cup whipped butter blend
2 tablespoons chopped garlic
2 tablespoons diced green onion
½ teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon dried oregano
¼ teaspoon black pepper
¼ teaspoon kosher salt
2) 1.5-2.0 lbs steaks (flank, sirlion, flat iron, etc.)
Cooking Instructions:
1. Bring herb butter to room temperature and set aside.
2. Season steaks with salt & pepper and grill or oven-broil (use the 2nd rack from the top with the oven door ajar) for 5-10 minutes per side, until done to your liking (rare 120-125ºF; med-rare 130-135ºF; medium 140-145ºF; med-well 150-155ºF; well 160ºF).
3. Smear top of each steak with 2 tsp. of garlic & herb butter; broil for 30 seconds.
Apple Crisp
1) In the bottom of a sprayed 9 x 13 baking pan, evenly layer the following:
6 cups sliced Granny Smith apples
2/3 cup raisins
½ cup brown sugar
4 pieces unsalted butter
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon kosher salt
2) In a large mixing bowl, add the following ingredients.
Using a rubber spatula, mix well to resemble a coarse meal with no lumps:
2 cups yellow cake mix
½ cup walnut pieces
½ teaspoon ground cinnamon
1 cup old fashioned oats
¼ cup canola oil
Pour over 9×13 pan
Cooking Instructions:
1. Bake, uncovered, at 350°F for:
FROZEN – 1 1/2-1 3/4 hrs.
THAWED – 1-1 1/4 hrs.
2. Crisp should be bubbling around edges & browned on top.
Serve with whipped cream or ice cream
Canadian Bacon Stuffed French Bread
A perfect party sandwich or for serving during “The Big Game”
1) 1 parbaked or partially cooked loaf French bread approx. 36 inches in length
2) Place a sprayed piece of foil (approximately 3 feet in length) on work surface. Place the bottom half of bread loaf diagonally on top of foil.
3) Combine the following ingredients in a mixing container.
2 pieces unsalted butter
¼ cup reduced fat cream cheese
2 teaspoons dried onion flakes
2 teaspoons dried parsley
2 teaspoons poppy seeds
1 cup cooked sausage crumbles
Once combined, spread on bottom half of bread loaf.
4) Evenly place the following ingredients over sausage crumbles:
14 slices Canadian bacon (large enough to cover length of bread)
6 slices Swiss cheese cut in half at the angle (enough to cover length of bread)
Cooking Instructions:
1. Bake wrapped in foil at 375°F for 20 min.
2. Open foil & bake for an additional 10 min. (internal temp. 145°F).
3. Cut & serve.
