Cider Braised Pork Chops
1) In a mixing bowl, combine:
2 teaspoons dried onion flakes
½ teaspoon dried thyme
2 teaspoons dried parsley
¼ teaspoon allspice
1/3 cup brown sugar, packed
3 cups sliced Granny Smith apples
1/3 cup cider vinegar
1 cup water
¾ cup apple juice concentrate
1 tablespoon chopped garlic
1 ½ cups diced tomatoes with juice
1 teaspoon chicken soup base
1 piece unsalted butter
2) 6 boneless pork chops
Cooking Instructions:
1. Heat 2 tsp. olive oil in large frying pan over med. high heat.
2. Season to taste; pan sear 3-4 min. per side.
3. Add sauce mixture to pan & bring to boil, uncovered.
4. Reduce heat & simmer uncovered for 12-15 min., until apples are tender (med.145°F-well 160°F).
Flank Steak with Green Peppercorn and Orange Sauce
1) In a small mixing bowl, add:
½ teaspoon black pepper
2 tablespoons green peppercorns
½ cup diced green onions
1 tablespoon chopped garlic
2 teaspoons orange zest
2 tablespoons orange juice concentrate
¼ cup lite soy sauce
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 tablespoon honey
2) 1 1.5 – 2.0 flank steak
Cooking Instructions:
1. Season steak to taste. Grill or oven broil (2nd rack from the top)
5-8 min. per side (refer to internal temp. guide).
2. Let meat rest 5 min. before slicing
3. Bring sauce to a boil (internal temp. 165°F); remove from heat.
4. Serve sauce on top or on the side of steak.
Greek Penne with Chicken, Lemon and Parsley
1) In a mixing bowl, add:
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon dried parsley
½ teaspoon black pepper
1 tablespoon dried onion flakes
2 teaspoons cornstarch
¼ cup diced green onions
2 tablespoons capers
1 tablespoon chopped garlic
Zest of (1) lemon
2 tablespoons lemon juice
2/3 cup white wine
1 teaspoon chicken soup base
½ cup water
2 tablespoons olive oil
2) 4 cups cooked, seasoned chicken breast strips
3) 2 cups (1 pound) penne pasta
Cooking Instructions:
1. Cook pasta according to directions.
2. Heat large frying pan over high heat w/2 tsp. olive oil.
3. Add chicken, season to taste & lightly brown.
4. Add sauce ingredients, bring to boil. Add pasta & cover.
5. Reduce heat & simmer 10-15 min. or until heated through, stirring occasionally (internal temp. 145°F).
